(Low-FODMAP, Gluten-free, Vegan)

INGREDIENTS:
For Apple filling:
Vanilla Cake/vanilla muffins
1/3 tub Coconut milk whipped cream
2 Gala/Fiji apples
½ tsp Cinnamon powder/cinnamon spice
¼ tsp Nutmeg(optional)
2 tbspSugar
Salt a pinch
½-1 tsp Gluten-free flour
For Assembly:
Vanilla Cake/vanilla muffins
1/3 tub Coconut milk whipped cream
METHOD:
Peel, remove core and dice the apples.
Add the diced apples, sugar, salt, cinnamon powder, nutmeg powder to a small sauce pan and toss them well. Cover with lid and let them simmer for 10 minutes on medium low.
Mix the apple mixture and dust the flour and mix well. (Do not add too much flour). Turn off the heat and let the mixture cool down completely.
In a dessert bowl/cup, crumble a vanilla cake, add one dollop of prepared coconut milk whipped cream, two dollops of the prepared apple filling and top with a dollop of coconut milk whipped cream and serve.
