PUMPKIN SPICE FLAX MUFFINS

(Low-FODMAP, Gluten-free, Dairy-free)

 

SERVES:4-6 COOKS IN: 20 MINUTES DIFFICULTY: 4/10

 
 

INGREDIENTS:

1cup + 1tbsp Oat flour

1 cup Pumpkin Pure

½ cup Almond milk

3 Eggs

8 tbsp Sugar

1 tbsp Cinnamon/Pumpkin spice powder

2 tsp Baking Soda

1tsp Vanilla

½ cup Walnuts

Salt a pinch


METHOD:

  1. Pre-heat oven at 350 degrees.

  2. Mix wet and dry ingredients.

  3. Pour in the mixture into a lined muffin tray and bake for 16-18 mins (at 350 degrees).
