CREAMY COCONUT MILK STICKY RICE WITH MANGO

(Medium-FODMAP, Gluten-free, Vegan)

 

SERVES:6-8 COOKS IN: 20 MINUTES DIFFICULTY: 4/10

 
 

INGREDIENTS:

3 cups Sticky rice(uncooked-soaked overnight)

2 cups Coconut milk (canned)

¾ cup Brown/Regular sugar

1 tsp Salt

½ cup mango pulp(Fresh/Frozen), Thawed


METHOD:

  1. Soak the rice overnight in water. Steam the rice until tender.

  2. While rice cooks, heat the coconut milk in a sauce pan on medium heat(Do Not Boil). Add sugar, salt and stir until everything dissolves.

  3. Add the cooked sticky rice to the hot coconut milk, mix well and let it sit for 30 minutes.

  4. To serve, add sticky rice to a dessert bow/cup, add mango pulp on top.
