COCONUT JAGGERY MATCHA BALLS

(Low-FODMAP, Gluten-free, Vegan)

 

SERVES:4-6 COOKS IN: 30 MINUTES DIFFICULTY: 5/10

 
 

INGREDIENTS:

1 cup Grated coconut(Fresh or Frozen)

1 cup Jaggery

½ tsp Cardamom, Powder

1 tsp Matcha tea powder(for dusting)

1 tbsp Vegan butter or Coconut oil

2 tbsp water

Salt a pinch


METHOD:

  1. Thaw coconut if frozen

  2. In a pan add jaggery, little water and boil it.

  3. Heat 1 tablespoon of Vegan butter or Coconut oil in another pan and add grated coconut and saute it for 5 minutes on low heat until the moisture evaporates.

  4. Add jaggery syrup, salt, cardamom powder and mix well and cook it until the mixture becomes thick.

  5. Turn off the heat, transfer it onto a plate, let it cool down a little bit.

  6. Apply a little Vegan butter or Coconut oil on palms and make the mixture into small balls. Dust them with matcha tea powder and refrigerate.
