AVOCADO CUCUMBER SALAD

(Medium-FODMAP, Gluten-free, Vegan)

 

SERVES: 2-3 READY IN: 15 MINUTES DIFFICULTY: 2/10

 
 

INGREDIENTS:

1 English cucumber, peeled & diced

4 Roma tomatoes, diced

2 Ripe avocados, diced

½ Red onion, diced

¼ cup fresh cilantro, chopped

1 Lemon, juiced

2 tbsp Extra virgin olive oil

Salt & Pepper, to taste


METHOD:

In a large bowl, add diced cucumber, tomato, avocado, onion, cilantro. Add olive oil, lemon juice, salt, pepper and and toss well.
